Recipe

Ingredients

  • 1/2 cup cashews
  • 1 large brown onion
  • 2 or 3 garlic cloves
  • 2 tablespoon nutritional yeast
  • 2 tablespoon lemon juice
  • Salt
  • Pepper
  • 2 cup water

Cashews

  • 1/2 cup cashews
  • Enough boiled water to soak all cashews
  • Soak cashews in hot water for 2 hours

Onion

  • Chop onion into tiny pieces, perhaps use food processor
  • Heat up a skillet with 1 cup of water and add chopped onion
  • In the mean time chop garlic finely and add it to the onion
  • Keep it together for water to evaporate and onion to soften

The sauce - add to the blender

  • Dry cashews and add them to the blender
  • Add 1/2 cup of water
  • Add the rest of ingredients to the blender
  • Blend everything together
  • Adjust the thickness adding water - if needed

Serve

  • Boil about 160 gram pasta
  • Preheat a skillet and add a bit of oil
  • Add sun dried tomatoes, asparagus or other veggies
  • Fry them a little
  • Pour half of the sauce
  • Add pasta
  • Heat everything up until ready to eat
