Tofu scramble
Breakfast for 2 people
Recipe
Whisk together
- 1/3 cup soy milk
- 2 tablespoons nutritional yeast
- between 1/2 and 1 teaspoon sweet or smoked paprika
- between 1/2 and 1 teaspoon tumeric
- 1 teaspoon dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder (optional)
- between 1/2 and 3/4 teaspoon black salt
Set the mixture aside for about 10 mins
Prepare onion sides
- 2 medium red or white onions, cut into slices
- 1 medium tomato, cut into chunks
Heat up a skillet with some oil and add onion slices. Fry it until translucent. Then add tomato chunks and stir it for about 2 minutes.
Tofu
- 300g firm style tofu
Squeeze out redundant water using your hands. Crush the tofu into chunks so that it looks like a scramble.
Fry the scramble
Heat up a skillet with a teaspoon of oil. Add crushed tofu and toss it around until it gets a bit more dry. Then pour the mixture over the tofu and toss it around on the skillet until the mixture is absorbed.
Add onions
Take the fried onions and them to the to the tofu. Toss it around, fry it together for another 1 to 2 minutes.
Serve
That’s it, the dish is ready to serve. Tastes delicious with micro greens and tomato on toast.
