Ingredients

  • 1/2 tablespoon oil for frying
  • 2 onions chopped
  • 4 garlic gloves minced
  • 2 teaspoon ginger
  • 1 teaspoon tumeric
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • 1 can light coconut milk
  • 2 cups dry red lentils
  • 650ml vegetable broth
  • 1 can chopped tomatoes
  • pinch of salt for taste
  • a few grinds of pepper for taste
  • 3 tablespoon lemon juice
  • 2 teaspoon sugar

Preparation

  • Fry onions until translucent then add garlic and ginger
  • Add spices
  • Rinse lentils under cold running water
  • Add lentils to onions
  • Add vegetable broth and stir to combine everything
  • Cook covered for about 10 minutes until lentils absorb most liquid
  • Add coconut milk and tomatoes
  • Cook for another 5 minutes until lentils tender
  • Add lime juice and sugar
