Recipe
Ingredients
- 1/2 tablespoon oil for frying
- 2 onions chopped
- 4 garlic gloves minced
- 2 teaspoon ginger
- 1 teaspoon tumeric
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon garam masala
- 1 can light coconut milk
- 2 cups dry red lentils
- 650ml vegetable broth
- 1 can chopped tomatoes
- pinch of salt for taste
- a few grinds of pepper for taste
- 3 tablespoon lemon juice
- 2 teaspoon sugar
Preparation
- Fry onions until translucent then add garlic and ginger
- Add spices
- Rinse lentils under cold running water
- Add lentils to onions
- Add vegetable broth and stir to combine everything
- Cook covered for about 10 minutes until lentils absorb most liquid
- Add coconut milk and tomatoes
- Cook for another 5 minutes until lentils tender
- Add lime juice and sugar
